Hi Candice! #1- ugh about missing the rice and beans in Puerto Viejo. It happened to me too, lol. So, you are right about this recipe and thanks for asking. Make the beans according tot he Costa Rican black beans recipe. Or, you can just use canned beans and drain them. Then, you will cook them in with the rice, but not twice. Does that make sense? 					<description><![CDATA[I just came back from Costa Rica and the only food I didn’t get to try was Caribbean rice and beans. Despite being fluent in Spanish, I thought “Caribbean rice and beans” was simply gallo pinto made on the Caribbean coast with leche de coco. It wasn’t til after 4 days in puerto viejo did I figure out I was wrong, but it was too late.

So now I’m looking for a recipe, authentic as possible, to try out at home. This one appealed to me. But I’m a bit confused, perhaps you can clarify.

There’s two sections: “for the beans” and “for the rice and beans”. Am I cooking two different types of beans in two styles for one recipe? Is the “for the beans” recipe to cook them from raw, then we use the cooked beans for the second part? It’s unclear, especially because you list different types of beans for each part. It seems like I’m cooking beans twice, and I don’t really even like beans as a solo ingredient in a dish so my instinct is to omit the first section entirely.]]></description>
